DINNER IS SERVED

So this is my first time cooking dinner since I started my healthy eating challenge. Tonight’s dinner tomatoes, onion, and basil marinated pork chops with potatoes and mixed greens (cabbage leak and Brussels sprouts) on the side. It turned out pretty good. First I chopped some potatoes and put them on the stove top to boil. Next I pan seared my pork chops (pre marinated) in a little oil to ensure dept of flavor in my dish. Then I sliced up some onions and fresh tomatoes and added them to my pork chops along with some all purpose seasoning, pepper, and left over Mediterranean seasoning mix. I let the mixture simmer for a while and once my potatoes were soft I threw them in, killed the heat and let the meat soak up the flavor while I simply boiled the frozen greens mixture with a little water, butter and salt and pepper to taste. And that’s all she wrote!
